3/4 cup chopped dried apricots
1/2 cup raisins
1/4 up dried cranberries
Zest of 1 orange
3/4 cup chopped walnuts
2 tsp cinnamon
1/4 tsp nutmeg
Pinch salt
2 cups almond meal
8 Medjool dates
1 vanilla bean scrapped
Juice of 1 orange
3 eggs
1/3 cup coocnut oil



Pre heat the oven to 150ºC and line a loaf tin with baking paper
– In a large mixing bowl combine the apricots, raisins, cranberries, orange zest, walnuts, cinnamon, nutmeg, salt and almond meal
– In a blender add the pitted dates, vanilla bean, orange juice, coconut oil and eggs and blend until smooth
– Mix the wet and dry ingredients together fully and pour into baking tin
– Bake for 1 1/4 – 1 1/2 hours or until skewer comes out clean


Nutrition Notes

Walnuts, which look like a brain, are high in Omega 3 essential fatty acids, which are critical for brain health! (LR)

Cinnamon boosts brain function.

Almonds are high in antioxidant vitamin E, along with minerals potassium and magnesium. Like all nuts, they contain healthy fats which help lower the risk of heart disease.
